Students will prepare a side, main, and dessert to eat together towards the end of the session.Discussion: LAB, Tastebuds, & Senses Week 3 Pantry Building: Fridge Condiments, Flavor Boosters, & DrinksTheory: The power of pantryHands-on activity: Prepare wild-fermented fruit soda, cheong, cultured butter, lacto-fermented condiments such as sambal and mustard.Take home: sambal, whole grain mustard, & cheong (wild-fermented fruit syrup) Week 4 Cooking Session & DiscussionTheory: Storing fermented foods, building carbonation in fermented beveragesHands-on activity: Utilize fermented pantry basics to whip up quick weeknight-style meals using fermented foods from the previous week in a group cooking session.
