Designed for the hardcore gastronomer, we offer an intensive 8-week gastronomy program based on a condensed version of the Cordon Bleu Master Diplome culinary program in Paris. Offered Saturday mornings from 10 am – 1 pm, we’ll take you on a culinary journey aimed at making you an expert chef in your own home kitchen, during this 8-week experience you will learn:.
Knife Skills & Kitchen Essentials* (Focuses heavily on chopping, specific knife cuts, mise-en-place, knife care & more)Salads, Dressing & Hors D'Oeuvres (Vinaigrettes, creamy dressings, dips, finger foods, etc.) Soups, Stocks & Sauces (5 Mother Sauces, purees, broths, etc.)Breakfast Cookery (Eggs Benedict, Hollandaise, perfect omelettes, pancakes, and more)Starches & Sides (Pasta, gnocchi, risotto, perfect mashed potatoes, gratin & rice cookery)Poultry Cookery (Deboning whole chicken, trussing, searing, grilling, duck confit & more)Meat Cookery (Cooking the perfect steak - rare to medium well - including cookery of beef, lamb and pork)Fish & Seafood Cookery (Fileting a whole fish into store-bought portions; grilling, searing, pan-frying perfect fish, as well as how to cook shrimp & shellfish)
We aim to show you how to perfect your techniques so that you not only make delicious food, but save your hard earned time and money. Each class (*other than Knife Skills) we cook at least 4 recipes and encourage you to bring tupperware as there's a lot of food leftover.
We provide all the tools, equipment & materials. All you need to bring along is a healthy appetite :) Please note that we also offer these classes on an individual basis if you prefer not to sign up for the whole program. Contact us for further information.
