Introductory Techniques & Lactofermentation Primer
Theory: Dive into the world of fermentation with an overview of the fundamental concepts and techniques.Hands-on activity: Prepare your first batch of lacto-fermented seasonal vegetables, fermented fruit, and whole cabbage kimchi.Take home: kimchi and fermented vegetables
Week 2
Cooking Session & Discussion
Theory: Food safety, troubleshooting, and how to pick produce for fermentationHands-on activity: Learn to make creative and flexible meals using fermented foods from the previous week in a group cooking session. Students will prepare a side, main, and dessert to eat together towards the end of the session.Discussion: LAB, Tastebuds, & Senses
Week 3
Pantry Building: Fridge Condiments, Flavor Boosters, & Drinks
Theory: The power of pantryHands-on activity: Prepare wild-fermented fruit soda, cheong, cultured butter, lacto-fermented condiments such as sambal and mustard.Take home: sambal, whole grain mustard, & cheong (wild-fermented fruit syrup)
Week 4
Cooking Session & Discussion
Theory: Storing fermented foods, building carbonation in fermented beveragesHands-on activity: Utilize fermented pantry basics to whip up quick weeknight-style meals using fermented foods from the previous week in a group cooking session. Students will prepare a side, main, and fermented beverage to enjoy together towards the end of the session.Discussion: Tasting time (the lifespan of ferments)Take home: wild-fermented fruit soda
Course Outcome: By the end of this course, you'll be equipped with the skills and confidence to embark on your own fermentation journey.
