Der Metzgermeister zerlegt Teile von Rind, Lamm und Schwein. Dabei entdecken wir außergewöhnliche Fleischteile, die wir brutzeln oder schmoren. Erfahren Sie wo das gute Fleisch seinen Ursprung hat, wie die Tiere gehalten und geschlachtet werden. Was wir am Ende nicht aufessen ist für zu Hause.

Hier lüften wir gleich zwei Geheimnisse: die echte kälberne Weißwurst und die typisch bayrische Brezn, ganz frisch aus dem Topf und knusprig aus dem heißen Steinbackofen. Wir machen Weißwurst – wie es sich gehört – ohne Zusatzstoffe, mit frischen Kräutern und Zitrone. Dann lernen wir gleich noch, wie die typisch bayrische Brezn entsteht: Teig kneten, Brezn drehn, einlaugen und frisch in den heißen Steinbackofen. Hmmm … jetzt sind die Weißwürste auch fertig. Dazu gibt’s kühles Weißbier aus unserer eigenen Brauerei. Bitte beachten: Die Herstellung von Weißwürsten ist mit üblichen Haushaltsgeräten daheim nicht möglich. In unserem Kurs verwenden wir einen professionellen Kutter.

Der Kurs widmet sich der guten Leberwurst, hergestellt nach altem Hausmacherrezept und dem original bayerischen Leberkäs‘. Es werden verschiedene Sorten Leberwurst im Glas zubereitet, es gibt wichtige Tipps von unserem Metzger und jeder packt mit an. Auch in das Geheimnis des echt bayerischen Leberkäs‘ wird eingeführt, selbst gekuttert und zubereitet – frisch gebacken schmeckt er einfach himmlisch. Dazu reichen wir Salate und natürlich kühles Schweinsbräu. Jeder erhält im Anschluss seine selbstgemachten Leberwurstgläser für zu Hause.
